The recipe for Ox Knee Soup

Main ingredients: 700g of ox knee 18 cups of water (3.6L) Other ingredients: 8 garlic cloves (40g) 1 green onion (100g) 1 tsp of black pepercorns (3g) 2 bay leaves (2g) 2cm of green onion (20g) and salt.
Explanation: Use garlic, leek, black pepper and bay leaves to eliminate the funky smell of meat. You may use the Korean-style soybean sauce instead of salt to season according to preference.
Cooking course
01. After washing the bones, soak them in water in the refrigerator for a day to remove blood. Strain them through a sieve. (Change the water often.)
 
02. Soak the bones entirely in water. When it boils, put the bones for 10 minutes, strain them through a sieve, and wash them in running water.
 
03. Put the bones, 18 cups of water, whole pepper, garlic, and bay leaf into a pot and cook over high heat. When it boils hard, lower the heat and simmer for 5~6 hours with the lid closed. Remove oil and bubbles.
 
04. Strain through a sieve to separate the soup. Separate the meat and bones and put them together into a pot. Cool it down and remove oil.
 
05. Cut spring onions into pieces. Boil 04 again and add the spring onions and salt.
